Oma’s Coconut Macaroons & Filbert Macaroons






177 g egg whites (= 6 large egg whites?)


Beat until fluffed up, then add:


500 g extrafine sugar


Juice of 1/4 lemon.


Beat until glossy and sugar is well dissolved.


DIVIDE into 2 portions, each 366 grams.


Into one portion, add:


250 grams unsweetened fine coconut.


Into the other portion, add:


350 grams finely ground filberts (hazelnuts)


Spoon onto individual oblaten discs.


Bake @ 350 degrees for 15 minutes.





Oma’s Christmas Sugar Cookies



Sugar Cookies

2 sticks butter (1/2 lb), room temperature

1 large egg

1 teasp. Baking Soda

2 teasp. Lemon juice

1.5 teasp. Vanilla extract

1.5 teasp. Almond extract


1 1/3rd cups powdered sugar

2 2/3rd cups flour


Colored sugar sprinkles



Cream butter. Add remaining ingredients except the flour and cream well. Last, add flour and mix until thoroughly blended.


Divide dough into 2 portions. Form into a flattened disk, wrap in plastic wrap, refrigerator for 2 hours or more.



Roll out 1/4 inch thick. Cut into shapes. Sprinkle with colored sugar.


Bake at 375F for 8-10 minutes.

Honey Lebkuchen Recipe 12-22-22












 


Mix the cinnamon into the flour. Set aside.

Warm honey and sugar in a heavy pot until bubbling. Add toasted almonds, chopped candied fruits, lemon zest (optional).

Use the rum to dissolve the ammonium bicarbonate leavening. (https://bakerpedia.com/ingredients/bakers-ammonia/) 
(or use 1 part baking powder plus 1 part baking soda.)

Add the dissolved ammonium bicarbonate to the honey mixture. Then add the cinnamon-flour. Mix well until it is all moist.

This dough will be warm. Best to make your hands wet and shape balls and flatten into disks placed on top of oblaten disks. The dough will become increasingly stiff as it cools, so I suggest that you shape them up while the dough is still a little warm. 

We baked these immediately at 350F for 12-14 minutes.
